While your point is reasonable - decreasing availability has long been known to increase demand in a free market (see Adam Smith) - the study you reference in the opening of this article appears to be poorly designed. You state that a participant "now sees a dwindling supply of cookies in the cookie jar." While that is true, the "dwindling supply" is coupled to a social interaction that may be giving the participant permission to have a cookie in this social context.

Answering survey questions isn't the type of interaction most of us have daily. Participants may not be sure of the etiquette regarding cookies - until another person takes one and eats it. It's a basic "monkey see, monkey do" response! Unless the study is redesigned to eliminate this interference, I don't believe we can draw conclusions from it regarding the effect of availability on demand.

However, the other conclusion that this study suggests, that people are more comfortable doing what they see others do, also applies to vaccines. If there is a shortage, caused by the numbers of people receiving vaccines, and I am not hearing about adverse affects....then getting the vaccine must be a good idea, right?

I appreciate that your aim is to counter propaganda from big Pharma. Citing well designed studies and applying careful critical thinking to those you cite is probably going to help.

you should ask yourself. DO i want to be a grandparent?
